Welsh Lamb – Rack FT CH off
- Sold as an 8-bone rack with trim and chine bone removed but included.
- Minimum weight is 700g.
- The rack is the best cut off the lamb animal and is very tender.
- Each 8-bone rack is French trimmed and chine removed completely (the bone at the base of the eye meat is sawn through and removed).
- This creates a quicker cooking time and less hassle when carving.
- The removed trim and chine bone can then be used to make a delicious stock.
